Can I set different available hours per staff member in the booking system?

Yes. Go to Reservations → Staff, open each staff member, and set their working days and hours individually — for example Staff A on Mon/Wed/Fri and Staff B on Tue/Thu/Sat.

The time slots customers see are generated per staff member from those schedules, so each person's availability is shown correctly.
